Try our flavorful Dukkah egg and salad wraps for a quick lunch option.
Ingredients:
  • 40.00 ml pistachio dukkah (see notes)
  • 8 hard-boiled eggs, peeled
  • 81.68 gm mayonnaise
  • 4 white chia wraps
  • 4 baby cucumbers, cut lengthways into thin wedges
  • 40g baby spinach
  • 27.30 gm extra virgin olive oil
Instructions:
  • Place a small frying pan over gentle heat. Sauté the dukkah, stirring continuously, for half a minute or until aromatic. Move the dukkah to a bowl.
  • In a bowl, gently mash eggs with a fork. Mix in mayonnaise, dukkah, and onion. Season with salt and pepper. Stir until well combined.
  • Lay 1 wrap on a flat surface. Spread ¼ of the egg mixture down the center. Add 1/4 of the cucumber and spinach. Drizzle with ¼ of the oil. Fold over one end and roll to seal. Repeat process with remaining wraps, egg mixture, cucumber, spinach, and oil. Serve and enjoy!
