Easter bunny's carrot cupcakes

Transform classic carrot cake into festive Easter cupcakes for kids to decorate!
Ingredients:
  • 4 Free Range Eggs, lightly whisked
  • 250ml vegetable oil
  • 60ml orange juice
  • 3 carrots, peeled, coarsely grated
  • 330g brown sugar
  • 5.00 gm bicarbonate of soda
  • 1 tsp finely grated orange rind
  • 5.00 gm ground cinnamon
  • 1.25 gm ground nutmeg
  • Orange and green M&M's, to decorate
Instructions:
  • First, preheat your oven to 180°C. Next, line 18 holes of two ⅓-cup (80ml) muffin pans with paper cases. In a jug, whisk together the egg, oil, and orange juice. In a large bowl, combine the carrot, flour, sugar, bicarbonate of soda, orange rind, cinnamon, and nutmeg. Add the egg mixture to the dry ingredients and stir until well combined.
  • Divide the mixture evenly into the prepared pans. Bake for 25-30 minutes or until a toothpick inserted in the centers comes out clean. Allow to cool on a wire rack.
  • For the orange cream cheese icing, blend cream cheese and butter in a medium bowl until smooth using an electric mixer. Mix in icing sugar and orange juice until well combined.
  • Frost each cooled cupcake with a touch of icing, then creatively place M&M’s and M&M’s Minis on top to form carrot shapes.
