Get the kids involved by decorating adorable bunny biscuits together.
Ingredients:
  • 125g butter, softened
  • 107.50 gm caster sugar
  • 1 egg yolk
  • 67.00 gm golden syrup
  • 500.00 ml plain flour
  • 2.50 gm bicarbonate of soda
  • 7.50 gm ground ginger
  • 3.75 gm ground cinnamon
  • 150.00 gm pure icing sugar, sifted
  • 1/2 small lemon, juiced
Instructions:
  • Preheat your oven to 180°C and prepare 2 baking trays by lining them with baking paper.
  • With an electric mixer, whisk together butter and caster sugar until light and fluffy. Mix in egg yolk and golden syrup until well combined. Sift flour, bicarbonate of soda, ginger, and cinnamon over the butter mixture. Stir using a wooden spoon until a stiff dough forms.
  • Shape dough into a 10cm round, roll out between 2 sheets of baking paper to 5mm thickness, and chill on a tray between the paper for 20 minutes until firm.
  • Take the dough and cut out 16 rabbit-shaped biscuits using the 8cm cutter. Put them on trays. Use a chopstick or skewer to punch a hole at the top of each biscuit and create decorative indentations.
  • Bake for 15 minutes or until lightly firm to the touch. Let them cool on trays to allow them to firm up even more.
  • Sift icing sugar into a bowl. Slowly mix in 1 tablespoon of lemon juice until smooth. Transfer the icing to a small snap-lock bag, remove air, and seal. Cut a small hole in one corner of the bag and pipe icing onto biscuits. Let the icing set, then thread ribbon through holes before serving.
