Easter bunny biscuits with white chocolate and strawberry jam decoration.
Ingredients:
  • 375.00 ml plain flour
  • 75.00 gm icing sugar mixture
  • 42.90 gm cocoa powder
  • 125g butter, chopped
  • 61.80 gm milk
  • 75g white choc melts, melted
  • 42.50 gm desiccated coconut
  • 52.80 gm strawberry jam
Instructions:
  • Preheat the oven to 180C (160C fan-forced) and line 2 large baking trays with non-stick baking paper.
  • Combine flour, icing sugar, and cocoa in a food processor. Pulse in butter until mixture looks like breadcrumbs. Pour in milk and pulse until dough starts to come together. Transfer dough onto non-stick baking paper and press it into a cohesive form.
  • Split the dough in half, then roll out one portion to a 5mm thickness. Use an 8cm bunny-shaped cutter to cut dough shapes, keeping them close together. Re-roll any dough scraps to make more shapes.
  • Place the dough portions on a baking tray. Chill for 15 minutes, then bake for 12 minutes. Allow to cool completely on a wire rack.
  • Coat half of the biscuits with creamy white chocolate and a generous sprinkle of coconut. Let them set. Spread jam on the remaining biscuits, then sandwich each with a bunny topped with coconut. Secure with a ribbon for added charm, if desired.
