Fluffy corn cakes fried to perfection, stuffed with cheese, beans, or your favorite Mexican fillings.
Ingredients:
  • 1 cup masa harina (instant corn masa mix)
  • 1 cup hot water
  • 1 cup all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 tablespoon shortening
  • 1 cup oil for frying
Instructions:
  • Prepare all of your fresh and delicious ingredients.
  • Combine masa harina, water, and salt in a large bowl, stirring until well mixed.
  • Combine the flour and baking powder in a small bowl and whisk until well mixed.
  • Incorporate flour mixture and shortening into masa harina with your hands as the mixture cools. If dough feels dry, add hot water, 1 to 3 teaspoons at a time, until dough is clay-like, evenly moistened, and slightly tacky.
  • Divide the dough into 6 equal balls, each approximately 2 ½ inches or 2 ¾ ounces in size. Cover them with plastic wrap to keep them fresh as you work.
  • Cover your work surface with waxed paper or plastic wrap and give it a light sprinkle of water. Take one ball of dough at a time and press it down on the damp surface to form a 5 ½-inch disc that is about 1⁄8-inch thick. Place the discs on a baking sheet lined with waxed paper or plastic wrap, and keep them covered with more plastic wrap as you repeat with the rest of the dough.
  • Preheat a griddle or comal over medium heat. Cook gorditas in batches if necessary until they are dry to the touch with a few light golden spots, about 2 to 3 minutes per side. Lay the gorditas in a single layer on large plates or a large baking sheet without covering them.
  • Heat oil in a large, heavy skillet over medium to medium-high heat until it bubbles immediately when touching the edge of a gordita. Fry each gordita until puffed, gently pressing it down with a spatula, about 45 seconds per side.
  • Pat dry on paper towels, then slice horizontally to make a pocket big enough to fill gorditas with your preferred fillings. Enjoy the deliciousness!
