Gorditas & salsa

Elevate your gorditas with a delightful apple salsa twist.
Ingredients:
  • 700 ml hot water
  • plain flour for dusting
  • olive oil
  • 1 red apple halved and cored
  • 3 large ripe tomatoes quartered and deseeded
  • 2 spring onions trimmed
  • 1 red chilli deseeded
  • 1 small bunch fresh coriander
  • 1 tablespoon pumpkin seeds
  • 1 tablespoon sunflower seeds
  • 1 lime
  • sea salt
  • freshly ground black pepper
  • 200 g Don Francisco Mexican cheese, or feta
  • 1 fresh red chilli very finely sliced, optional
  • 1 lime cut into wedges
  • 500 g fine cornmeal or masa harina
  • ½ level teaspoon sea salt
  • 1 heaped teaspoon baking powder
Instructions:
  • In a large bowl, combine the cornmeal, salt, and make a well in the center. Mix baking powder with hot water and pour it into the well. Use a fork to incorporate the cornmeal into the liquid, then knead the dough by hand. Divide the dough into 16 balls, dust with flour, and flatten each into a small round. Place on an oiled tray and set aside. Prepare the salsa by chopping apples, tomatoes, spring onions, and slicing the chili. Mix with coriander stalks, pumpkin and sunflower seeds, lime juice, olive oil, salt, and pepper. Adjust seasoning to your taste. Heat olive oil in a pan and cook gorditas for 2-3 minutes per side until golden. Serve warm with salsa, cheese, coriander leaves, chili slices, and lime wedges. Enjoy!
