Create a delightful Easter Bunny Cake using Betty Crocker™ Super Moist™ Carrot Cake Mix and shredded coconut for added flavor and texture. Follow the diagram to shape the cake, then decorate with coconut for fur and jelly beans for eyes and nose. Perfect for a festive Easter treat!
Ingredients:
  • 1 box Betty Crocker™ Delights Super Moist™ Carrot Cake Mix
  • Water, vegetable oil and eggs called for on cake mix box
  • Tray or cardboard covered with wrapping paper and plastic food wrap or foil
  • 1 tub (12 oz) Betty Crocker™ Whipped Fluffy White Frosting
  • 1 cup coconut
  • Construction paper
  • Jelly beans or small gumdrops, as desired
  • 1 cup shredded coconut
  • Green liquid food color
Instructions:
  • Preheat your oven to 350°F (325°F for dark or nonstick pans). Prepare and bake the cake according to the box instructions for two 8-inch or 9-inch round pans. Set one layer aside in the freezer for future use. Chill the other layer for 45 minutes before slicing to minimize crumbs.
  • Slice the cake layer in half horizontally. Sandwich the two halves together with frosting to form the body. Stand the cake upright on its cut edge on a tray.
  • Create the head of the bunny by cutting out a notch on one end of the body, around one-third of the way up (small end). Secure half of the cut-out piece from the tail using toothpicks. Frost the body generously with remaining frosting, shaping it round on the sides. Sprinkle all over with 1 cup of coconut. Make ears from construction paper, wrap the ends that will go into the cake with plastic wrap. Insert them into the notch on top. Finish by using jelly beans for the eyes and nose.
  • Place 1 cup of coconut in a 1-quart resealable plastic bag. Add food color to reach your preferred tint, then shake the bag to coat the coconut. Use the tinted coconut to surround the bunny, and add extra jelly beans if you like. Remember to remove the ears, plastic wrap, and toothpicks before serving, and store the dessert covered loosely.
