Delightful Easter bunny cupcakes with marshmallow ears, perfect for brunch.
Ingredients:
  • 1 cup unsalted butter, softened
  • 2 tablespoons unsalted butter, softened
  • 1.75 cups white sugar
  • 2 teaspoons grated lemon zest
  • 3.5 cups all-purpose flour
  • 0.5 teaspoon baking powder
  • 1 (16 ounce) container sour cream
  • 5 cups confectioners' sugar
  • 2 tablespoons milk
  • 30 large marshmallows, cut in half lengthwise
  • 1 cup pink sugar sprinkles
  • 30 candy-coated milk chocolate pieces (such as M&M's®)
  • 1 (1.5 ounce) tube black decorating gel
Instructions:
  • Preheat the oven to 350°F (175°C) and prepare a 30-cup muffin tin by greasing or lining with paper liners.
  • In a large bowl, use an electric blender to cream together 1 cup plus 2 tablespoons of butter and white sugar until smooth. Add eggs one at a time, beating well after each addition. Mix in lemon zest and vanilla extract.
  • In a separate bowl, mix together flour, baking soda, baking powder, and salt. Incorporate into the butter mixture alternately with sour cream until a thick batter forms. Fill each muffin cup with 1/4 cup of batter.
  • Bake in the preheated oven for 20-25 minutes until tops spring back when lightly pressed. Allow to cool in the tins for 10 minutes, then transfer to a wire rack to cool for about 20 minutes.
  • While the cupcakes cool, make the frosting. Use an electric blender to mix 1 cup plus 2 tablespoons of butter and vanilla extract until creamy. Gradually add confectioners' sugar, 1 cup at a time, mixing well after each addition. Then, blend in milk until the frosting is light and fluffy.
  • On a clean surface, place marshmallow halves cut-side down. Add a dab of frosting to the center of each marshmallow half. Sprinkle with pink decorating sugar to create bunny ears.
  • Frost each cooled cupcake evenly. Add 2 marshmallow halves to each cupcake for ears, place a chocolate piece in the center for the nose, then create eyes and whiskers with black decorating gel.
