Easter-themed carrot-shaped cream cheese dip topped with Cheddar, perfect with crackers.
Ingredients:
  • 1 (2.25 ounce) can sliced black olives, rinsed and drained
  • 2 ounces pimento-stuffed green olives, rinsed and drained
  • 2 (8 ounce) packages cream cheese, at room temperature
  • 4 ounces finely shredded sharp Cheddar cheese
  • 2 teaspoons mild taco seasoning mix
  • 10 sprigs fresh parsley, stems cut to 2 inches long
  • 2 ounces shredded sharp Cheddar cheese, or as needed
Instructions:
  • Pulse black olives and green olives in a food processor or food chopper until finely chopped.
  • Combine cream cheese, 4 ounces of Cheddar cheese, chopped olives, and taco seasoning in a bowl. Beat with an electric mixer on low speed, then increase to medium until thoroughly blended.
  • Spread the cheese mixture on a serving plate and form it into a 2-inch-thick carrot shape with a silicone bowl scraper. Coat the entire "carrot" with 2 ounces of Cheddar cheese. Garnish the top with parsley sprigs. Wipe off any extra cheese on the plate with a damp napkin. Seal with plastic wrap and refrigerate for a minimum of 2 hours.
