Easter egg mousse in minutes

Whip up these adorable Easter egg mice treats in minutes that kids love!
Ingredients:
  • 200g dark chocolate, chopped
  • 12 medium hollow chocolate Easter eggs
  • 2 eggs
  • 40.00 gm caster sugar
  • 300ml thickened cream
Instructions:
  • In a microwave-safe bowl, heat the dark chocolate on HIGH for 1 minute and 30 seconds, stirring every 30 seconds until melted and smooth. Let it cool for 20 minutes before using.
  • Trim the tops of the Easter eggs, removing 2cm (reserve the tops for later).
  • Beat eggs and sugar using an electric mixer until pale and thick. Carefully fold in cooled dark chocolate.
  • Whip cream until it forms soft peaks. Gently fold 3/4 of the whipped cream into the chocolate mixture.
  • Transfer the mousse to a piping bag with a 1cm-fluted nozzle and fill the Easter eggs. Fill another piping bag with the remaining cream using an 8mm-fluted nozzle, and pipe the cream on top of the mousse. Chill in the refrigerator for 30 minutes before serving.
