Italian Easter pie filled with ham, salami, prosciutto, ricotta, and mozzarella - a delicious addition to your Easter spread.
Ingredients:
  • 2 pounds ricotta cheese
  • 6 large eggs
  • 1 pound cooked ham, chopped
  • 0.5 pound Genoa salami, chopped
  • 0.5 pound mozzarella cheese, grated
  • 0.25 pound prosciutto, chopped
  • 4 (9 inch) unbaked pie crusts
  • 0.25 cup grated Parmesan cheese
Instructions:
  • Preheat your oven to 325°F (165°C).
  • In a large mixing bowl, combine ricotta and eggs one at a time using an electric mixer. Fold in ham, salami, mozzarella, and prosciutto until fully mixed.
  • Prepare two 9-inch pans by lining them with pastry. Spread the ricotta mixture evenly between the two pans. Sprinkle Parmesan cheese over each pie before topping them with pastry. Seal the edges by crimping them and create steam vents on the tops.
  • Bake in the oven until the crust turns golden brown, approximately for 1 hour. Let the pies cool on wire racks.
