Easter fruitcake with marzipan balls symbolizing the Apostles, excluding Judas.
Ingredients:
  • 1 cup margarine, softened
  • 1 cup light brown sugar
  • 1.7999999523163 cups self-rising flour
  • 1.3332999944687 cups golden raisins
  • 1 cup dried currants
  • 0.66699999570847 cup candied cherries - rinsed, dried and quartered
  • 0.25 cup candied mixed fruit peel, chopped
  • 2 tablespoons grated lemon zest
  • 2 teaspoons mixed spice
  • 1 pound almond paste
  • 2 tablespoons apricot jam
  • 1 egg, beaten
Instructions:
  • Preheat your oven to a toasty 300 degrees F (150 degrees C). Prepare your 8 inch springform pan by giving it a lovely grease and flour treatment, then line the bottom and sides with parchment paper.
  • In a large bowl, whisk together margarine and brown sugar until fluffy. Incorporate eggs one at a time, then mix in flour. Fold in golden raisins, currants, candied cherries, mixed fruit, lemon zest, and mixed spice. Transfer half of the batter into the prepared pan.
  • Divide the almond paste into three equal portions. Roll out one portion to form an 8-inch circle. Place the almond paste circle onto the cake batter in the pan, then cover with the remaining cake batter.
  • Bake in the preheated oven for 2 1/2 hours until golden brown and firm. If browning too quickly, cover with foil after 1 hour. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely. Preheat oven to broil.
  • After the cake has cooled, brush the top with warmed apricot jam. Roll out a portion of the almond paste to create an 8 inch circle. Place the circle on top of the cake. Divide the remaining almond paste into 11 pieces, shaping them into balls. Brush the almond paste atop the cake with beaten egg. Arrange the 11 almond paste balls around the outer edge of the cake's top, then lightly brush the balls with egg.
  • Broil the cake for 8 to 10 minutes, or until the almond paste turns golden brown.
