Kids go wild for hidden chocolate egg cupcakes!
Ingredients:
  • 2.25 cups all-purpose flour
  • 2.5 teaspoons baking powder
  • 1 teaspoon salt
  • 0.66666668653488 cup margarine, softened
  • 1 cup brown sugar
  • 0.75 cup white sugar
  • 1 teaspoon vanilla extract
  • 1.25 cups milk
  • 24 small chocolate eggs, unwrapped
Instructions:
  • Preheat oven to 350 degrees F (175 degrees C) and grease 24 muffin cups, or use paper liners. Sift flour, baking powder, and salt together and set aside.
  • In a large bowl, mix the margarine, brown sugar, and white sugar until light and fluffy. Add the eggs one at a time, followed by the vanilla. Alternately mix in the flour mixture and milk, stirring until just combined.
  • Fill each muffin cup one-third full with batter, place a chocolate egg in the center, and top with more batter until cups are two-thirds full.
  • Bake in a preheated oven until golden brown, and the tops spring back when lightly tapped, about 18 to 20 minutes.
