Whip up delightful Easter cupcakes with colorful surprises inside and a playful PEEPS® chick on top. Discover the recipe in our easy guide.
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ Yellow Cake Mix
  • Water, vegetable oil and eggs called for on cake mix box
  • 1 cup assorted mini candy-coated chocolate candies or confetti candy sprinkles
  • 1 tub (16 oz) Betty Crocker™ Rich & Creamy Creamy White Frosting (or any white variety)
  • Green food color
  • Green colored decorating sugar
  • 24 yellow PEEPS® brand marshmallow chicks
Instructions:
  • Preheat the oven to 350°F (or 325°F for dark or nonstick pans) and line 24 regular-size muffin cups with paper baking cups.
  • Prepare the cake batter following the instructions on the box. Fill the muffin cups two-thirds full with the batter. Bake as directed on the box for cupcakes. Allow them to cool in the pans for 10 minutes, then transfer to a cooling rack. Let them cool completely for about 30 minutes before serving.
  • Hollow out the center of each cupcake with a melon baller to a depth of about 1 inch. Fill each hollow with a generous teaspoon of candies.
  • Transfer the frosting into a medium bowl and mix in food color until you achieve your desired green shade. Frost the cupcakes, sprinkle with colored sugar, and finish by topping each cupcake with a yellow PEEPS® chick. Store loosely covered.
