Lemonade PEEPS® Cupcakes

Luscious lemon buttercream tops lemon cupcakes, finished with zesty lemonade PEEPS® chicks for the perfect sweet and tangy treat!
Ingredients:
  • 1 box Betty Crocker™ Delights Super Moist™ Lemon Cake Mix
  • Water, oil and eggs called for on cake mix box
  • 1 cup butter, softened
  • 6 cups powdered sugar
  • 4 to 6 tablespoons fresh lemon juice
  • 2 to 4 tablespoons milk
  • Yellow coarse decorating sugar
  • 24 PEEPS® sweet lemonade flavored marshmallow chicks
  • 24 straws
Instructions:
  • Preheat the oven to 375°F and line 24 muffin cups with paper baking cups. Prepare the cake batter according to the box instructions for cupcakes. Allow the cupcakes to cool completely on a rack for about 30 minutes.
  • Prepare the Lemon Buttercream by creaming butter in a large bowl with an electric mixer until smooth. Add powdered sugar, 4 tablespoons of lemon juice, and 2 tablespoons of milk. Mix until smooth, adjusting with additional lemon juice and milk for desired consistency.
  • Fill a piping bag with buttercream using a large open star tip. Frost the cupcakes by piping the buttercream on top. Sprinkle coarse decorating sugar over each cupcake and place a PEEPS® chick on top. Trim about 4 inches off the bottom of each straw and discard it. Gently insert a trimmed straw into each cupcake.
