Quick and delicious shrimp and asparagus pasta - ideal for family dinners or entertaining guests.
Ingredients:
  • 1 (16 ounce) package penne pasta
  • 1 pound cooked, ready-to-eat jumbo shrimp
  • 0.5 cup olive oil
  • 1 pound fresh asparagus, trimmed and cut into thirds
  • 1 teaspoon red pepper flakes, or to taste
  • 4 cloves garlic, finely chopped
  • 0.25 cup grated Parmesan cheese
Instructions:
  • 1. Boil a large pot of water. Add pasta and cook for 8 minutes, stirring occasionally. Introduce cooked shrimp and continue cooking for 2 to 3 minutes until the shrimp is heated through and the pasta is al dente.
  • Heat olive oil in a large skillet over medium heat. Cook asparagus and red pepper flakes for 3 minutes, stirring frequently. Add garlic and cook until asparagus is tender yet firm, about 4 to 5 minutes more.
  • After draining the pasta and shrimp, combine them in a large serving bowl with cooked asparagus and Parmesan cheese. Stir to mix everything thoroughly, season with salt and pepper, and serve hot.
