Asian-inspired salmon tray bake marinated in mirin and sweet chili for a mouthwatering meal.
Ingredients:
  • 48.00 gm white miso paste
  • 30.00 ml mirin
  • 33.00 gm sweet chilli sauce
  • 15.90 gm soy sauce
  • 15.90 gm fresh lime juice
  • 1 tsp finely grated ginger
  • 2 x bunches asparagus, trimmed
  • 8 green shallots, trimmed
  • 1 large red capsicum, deseeded, cut into long strips
  • 4 x (about 220g each) skinless, salmon fillets
  • Sesame seeds, to sprinkle
  • 62.50 ml fresh coriander leaves
  • 450g packet microwave brown rice, to serve
Instructions:
  • Combine miso, mirin, sweet chili sauce, soy sauce, and lime juice in a jar. Whisk with a fork until well-combined. Refer to note for additional details.
  • Preheat the oven to 200C/180C fan forced. Grease a large oven tray, then place the asparagus, shallots, and capsicum on it. Drizzle the vegetables with oil.
  • Lay the salmon fillets over the vegetables and generously brush with the marinade. Bake until just cooked, about 15 minutes. Finish off with a sprinkle of sesame seeds and fresh coriander leaves. Serve alongside brown rice and lime wedges.
