Delicious salmon and veggies cooked in foil packets, perfect for meal prep with easy cleanup.
Ingredients:
  • 1 (6 ounce) salmon fillet
  • 2 tablespoons honey
  • 1 clove garlic, minced
  • 1 teaspoon soy sauce
  • 1 teaspoon rice vinegar
  • 1 teaspoon sriracha sauce
  • 0.5 teaspoon sesame oil
  • 0.5 teaspoon refrigerated ginger paste
  • 1 cup sugar snap peas
  • 0.25 cup sliced mushrooms
  • 1 tablespoon sweet chili sauce
Instructions:
  • Preheat the oven to 400°F (200°C) and line a flat work area with aluminum foil.
  • Place the salmon filet in the center of the foil. Combine honey, garlic, soy sauce, rice vinegar, sriracha sauce, sesame oil, and ginger paste in a small bowl. Drizzle the mixture over the salmon.
  • In a separate bowl, toss snap peas, mushrooms, and sweet chili sauce until well combined. Spread the mixture around the salmon on a piece of foil, then fold the foil over to seal everything into a packet.
  • Cook the salmon in the preheated oven until it flakes easily with a fork, for about 25 minutes. Gently open the packet to reveal the salmon, then broil on low until the glaze is golden brown, approximately 5 minutes.
