Baked potato salad with crispy bacon, tangy sour cream, and creamy mayo - delicious and simple!
Ingredients:
  • 2 pounds red potatoes, scrubbed
  • 0.75 thick slice bacon, divided
  • 1 cup shredded Cheddar cheese, divided
  • 0.75 cup sour cream
  • 0.25 teaspoon salt, or to taste
  • 0.25 teaspoon freshly ground black pepper, or to taste
Instructions:
  • Preheat your oven to 350°F (175°C).
  • Pierce potatoes all over with a fork and spread out on a baking sheet. Bake in a preheated oven until easily pierced with a fork, about 50 minutes to 1 hour.
  • Prepare the baking sheet by lining it with aluminum foil. Arrange the bacon strips in a single layer on the sheet. Place the baking sheet in the oven while the potatoes are baking. Cook the bacon until it is browned and crisp, which should take about 15 minutes. Remove the bacon from the oven and drain it on paper towels.
  • Take the roasted potatoes out of the oven and allow them to cool completely.
  • Break the crispy bacon into crumbles and chop the potatoes into bite-sized pieces, leaving the skins on or peeling them, based on your preference.
  • Mix together the majority of the Cheddar cheese, the majority of the bacon, mayonnaise, sour cream, salt, and pepper in a large bowl until well combined. Gently fold in the diced potatoes until they are evenly coated with the mixture.
  • Garnish the salad with the rest of the Cheddar cheese and bacon just before serving.
