Smashed potatoes with sour cream dressing

Elevate your side dish with creamy Sour Cream Smashed Potatoes.
Ingredients:
  • 4 x 400g pkts Fresh Baby Potatoes with Butter & Herbs (see note)
  • Olive oil spray
  • 65g (1/4 cup) sour cream
  • 20.20 gm pouring cream
  • 125.00 ml fresh continental parsley leaves
  • 1 bunch fresh chives, cut into 3cm lengths
Instructions:
  • Preheat oven to 220°C. Cook potatoes according to package instructions, then let cool for 5 minutes. Lightly crush using the back of a spoon.
  • In a roasting pan, arrange the potatoes in a single layer. Generously spray with oil and season with salt and pepper. Roast in the oven for 30 minutes or until golden and crispy.
  • Whisk sour cream and cream together until smooth. Mix parsley and chives in a separate bowl.
  • In a bowl, toss potatoes with dressing and sprinkle with herbs for an extra burst of flavor.
