Elevate mashed potatoes with parsley, garlic, and tangy sour cream for a delicious twist on a classic side dish!
Ingredients:
  • 4 medium unpeeled potatoes, cut into 1-inch pieces
  • 6 cloves garlic, peeled
  • 1/3 cup chopped fresh flat-leaf or curly-leaf parsley
  • 1/2 teaspoon salt
  • Pepper, if desired
  • 1/4 cup fat-free gluten-free sour cream
Instructions:
  • In a 3-quart saucepan, simmer tender potatoes and garlic in water until fully cooked, about 15 to 20 minutes. Reserve some of the flavorful cooking liquid for later use. Drain the potatoes and set aside.
  • In a saucepan, use a potato masher to blend potatoes, garlic, parsley, salt, and pepper until slightly lumpy. Slowly mix in 1/4 cup cooking liquid until combined but still chunky. Finally, fold in the sour cream.
