Creamy smashed red potatoes with a buttery sour cream sauce, a luxurious side dish for festive meals.
Ingredients:
  • 3 pounds red potatoes
  • 1 tablespoon kosher salt
  • 1.5 cups half-and-half
  • 0.5 cup butter
  • 0.5 cup sour cream
  • 2 teaspoons kosher salt
Instructions:
  • In a large pot, combine potatoes and 1 tablespoon of kosher salt. Cover with water and bring to a boil. Lower the heat to medium-low, cover, and simmer until potatoes are tender, for about 25 to 35 minutes. Drain and transfer to a large bowl.
  • In a small saucepan, gently heat half-and-half and butter over medium-low heat until the butter is melted and the mixture is warmed through, about 5 to 10 minutes.
  • Mash potatoes with an electric hand mixer in a large bowl. Gradually add 3/4 of the cream-butter mixture while mixing on low speed until well combined. Gently fold in the rest of the cream-butter mixture and sour cream. Season with 2 teaspoons kosher salt and black pepper to taste.
