Indulgent red velvet cakes with cream cheese icing, inspired by the iconic Waldorf Astoria hotel - simply elegant and incredibly delicious.
Ingredients:
  • 350g (2 1/3 cups) plain flour
  • 20.00 gm cocoa powder
  • 2.50 gm bicarbonate of soda
  • 4.00 gm baking powder
  • 315g (1 1/2 cups) caster sugar
  • 250ml (1 cup) buttermilk
  • 185ml (3/4 cup) vegetable oil
  • 2 eggs
  • 3 tsp red food colouring
  • 2 tsp white vinegar
  • Dollar Sweets Fairy Fives sprinkles, to decorate frosting
  • 250g pkt cream cheese, at room temperature
  • 100g butter, at room temperature
  • 195g (1 1/4 cups) pure icing sugar, sifted
  • 4.40 gm vanilla extract
Instructions:
  • Preheat the oven to 180°C. Line 18 muffin cups with paper liners. In a large bowl, sift together flour, cocoa powder, bicarbonate of soda, and baking powder. Mix in the sugar.
  • In a jug, combine buttermilk, oil, eggs, food coloring, and vinegar by whisking until smooth. Create a hole in the middle of the flour mix. Pour in the buttermilk mixture and gently stir until just combined.
  • Pour the mixture into the prepared pans and bake for 20-25 minutes until a skewer comes out clean. Cool the cupcakes on a wire rack.
  • Prepare a luscious cream cheese frosting by using an electric beater to combine cream cheese, butter, icing sugar, and vanilla in a bowl until velvety smooth.
  • Drizzle the icing generously over the cupcakes and sprinkle with colorful sprinkles.
