Ingredients:
  • 1 1/2 cups sugar
  • 1/2 cup (1 stick) butter, room temperature
  • 2 large eggs, room temperature
  • 2 1/3 cups cake flour
  • 2 tablespoons Dutch-processed cocoa powder
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1 1/2 tablespoons red food coloring
  • 1 teaspoon vanilla extract
  • 1 teaspoon distilled white vinegar
  • Cream Cheese Frosting:
  • 1/2 cup butter (1 stick), room temperature
  • 8 ounces Philly cream cheese (1 package), room temperature
  • 2-3 cups powdered sugar
Instructions:
  • Preheat your oven to 350°F then neatly line a muffin tin with cupcake papers.
  • Prepare the cupcake batter: Beat the butter and sugar with an electric mixer for 3 minutes until light and fluffy. Add eggs one at a time, mixing well after each addition. Scrape the bowl well. In a large bowl, sift together cake flour, cocoa powder, baking soda, baking powder, and salt. In a separate bowl, whisk buttermilk, vinegar, vanilla extract, and red food coloring. Add dry ingredients and wet ingredients alternately in batches, mixing until just combined.
  • Portion the cupcake batter evenly into the cupcake papers, filling them about halfway to three-quarters full.
  • Bake the cupcakes for 18-22 minutes, rotating the pan halfway through baking for even cooking, until a toothpick inserted in the center comes out clean.
  • Let the cupcakes cool in the pan for a minute before transferring them to a wire rack to cool completely.
  • Prepare the frosting by blending the butter and cream cheese for 3 minutes. Scrape the bowl down to ensure even mixing. Stir in the vanilla extract, then gradually incorporate powdered sugar until desired sweetness is reached. (Full instructions under Cream Cheese Frosting.)
  • Frost the cupcakes by piping the frosting onto the cooled cupcakes.
