Decadent Red Velvet cake with creamy cream cheese center, perfectly balanced sweetness, and simple to prepare. No frosting required.
Ingredients:
  • 2 (8 ounce) packages cream cheese, softened
  • 0.5 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla
  • 1 teaspoon lemon juice
  • 1 package Duncan Hines® Red Velvet Cake Mix
  • 1.25 cups water
  • 0.33333334326744 cup vegetable oil
  • 3 large eggs
  • powdered sugar
Instructions:
  • Preheat the oven to 350 degrees F and line 24 regular-size muffin cups with paper baking cups.
  • Prepare Filling - In a medium bowl, combine cream cheese, sugar, eggs, vanilla, and lemon juice. Mix with an electric mixer on medium speed until smooth and creamy, approximately 2 minutes. Set aside.
  • Prepare the cake mix according to the instructions on the box, using water, oil, and eggs. Fill each muffin cup about 2/3 full with batter, then add approximately 2 tablespoons of filling to the center.
  • Bake in the center of the oven for 22 to 25 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool for 5 minutes before removing from the pan and transferring to a wire rack to cool completely.
  • Chill dish in the fridge while covered.
  • Sprinkle with powdered sugar to add a touch of sweetness and elegance.
