Colorful peppers and Italian sausage simmered in a rich red wine sauce create a deliciously rustic dish.
Ingredients:
  • 2 red bell peppers
  • 1 yellow bell pepper
  • 1 orange bell pepper
  • 8 (3.5 ounce) links Italian sausage
  • 0.25 cup extra-virgin olive oil
  • 1 large yellow onion, cut into large dice
  • 0.5 cup red wine
  • 0.5 teaspoon dried oregano
  • salt and ground black pepper to taste
Instructions:
  • Prepare the grill by preheating it to medium heat and brushing the grate with a light coating of oil.
  • Grill assorted bell peppers until charred all over for about 15 minutes, turning occasionally. Place in a resealable bag to cool, peel off skin, deseed, and chop.
  • Grill sausages until beautifully browned and cooked through, around 8 minutes per side. Ensure they reach an internal temperature of at least 160°F (70°C) by using an instant-read meat thermometer.
  • In a large skillet over medium heat, sauté onion in olive oil until tender, about 5 minutes. Add diced peppers and cook until heated through. Slice cooked sausages diagonally into bite-size pieces and mix into the peppers and onion.
  • Increase the heat to medium-high, add red wine and oregano, and bring to a boil. Cook, stirring occasionally, until the red wine has reduced by one third, approximately 10 minutes. Season with salt and black pepper to taste.
