Quickly make a creamy French herb sauce in the microwave with yolks, white wine vinegar, cream, and butter.
Ingredients:
  • 0.25 cup butter
  • 2 large egg yolks, beaten
  • 2 tablespoons heavy cream
  • 1 tablespoon white wine vinegar
  • 1.5 teaspoons lemon juice
  • 1 teaspoon minced onion
  • 1 teaspoon dried tarragon
  • 1 teaspoon chopped fresh parsley
  • 0.25 teaspoon salt
  • 1 pinch dry mustard
  • 1 pinch cayenne pepper
Instructions:
  • Assemble all ingredients.
  • In a microwave-safe glass bowl, melt the butter on high for about 30 seconds. Add egg yolks, heavy cream, white wine vinegar, lemon juice, and onion. Season with tarragon, parsley, salt, mustard powder, and cayenne pepper, then mix until well combined.
  • Heat in the microwave, stirring every 20-30 seconds, until thickened, approximately 1 1/2 minutes.
