Fresh blackberry cobbler with buttery biscuit topping, simple pantry ingredients create a cozy dessert.
Ingredients:
  • 1 cup all-purpose flour
  • 1.5 cups white sugar, divided
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 6 tablespoons cold butter
  • 0.25 cup boiling water
  • 2 tablespoons cornstarch
  • 0.25 cup cold water
  • 4 cups fresh blackberries, rinsed and drained
  • 1 tablespoon lemon juice
Instructions:
  • Preheat the oven to 400°F (200°C) and prepare a baking sheet by lining it with aluminum foil.
  • Combine flour, a generous 1/2 cup of sugar, baking powder, and salt in a large bowl. Incorporate butter until the mixture looks like coarse crumbs. Gently fold in boiling water until evenly moistened.
  • In a separate bowl, combine cornstarch with cold water until dissolved. Stir in 1 cup sugar, blackberries, and lemon juice. Transfer the mixture to a cast iron skillet and bring to a boil, stirring often. Drop spoonfuls of dough over the mixture and place the skillet on a prepared baking sheet.
  • Bake until the dough turns golden brown, for around 25 minutes in the preheated oven.
