Quick and tasty butterscotch candies ready in under an hour.
Ingredients:
  • 1/2 cup packed brown sugar
  • 1 box (4-serving size) butterscotch-flavored pudding and pie filling mix (not instant)
  • 1 cup granulated sugar
  • 1/2 cup half-and-half
  • 1 tablespoon butter or margarine
  • 1 cup blanched whole almonds, toasted if desired
  • 1/4 cup boiling water
Instructions:
  • 1. Prepare a cookie sheet by lining it with foil. In a 2-quart saucepan, use a wooden spoon to mix all ingredients except boiling water. Cook over medium heat, stirring continuously, until the mixture comes to a rapid boil. Boil and stir for 3 minutes. Pour boiling water into a measuring cup. Remove the candy from the heat and continue to stir vigorously for 4 to 5 minutes until the mixture thickens but remains shiny.
  • Efficiently spoon praline mixture onto a baking sheet, shaping into patties with the back of a wooden spoon as necessary. If mixture becomes too stiff, gently mix in hot water, 1/4 teaspoon at a time, until creamy. Let cool for 30 minutes, then store in an airtight container.
