Easy oatmeal butterscotch bar cookies: Press, bake, and slice for a delightful treat.
Ingredients:
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 cup butter, softened
  • 0.75 cup white sugar
  • 0.75 cup brown sugar
  • 1.5 cups quick-cooking rolled oats
  • 2 cups butterscotch chips, divided
Instructions:
  • Preheat your oven to 350°F (175°C) and lightly grease a 9x13-inch baking pan.
  • Combine the flour, baking powder, baking soda, and salt in a bowl, whisking until well mixed.
  • Combine butter, white sugar, and brown sugar in a large mixing bowl until smooth and creamy. Next, beat in the eggs to create a creamy mixture. Gradually mix in the flour, rolled oats, and 1 1/2 cups of butterscotch chips.
  • Gently pat the dough into the baking dish, then generously sprinkle the top with the remaining 1/2 cup of butterscotch chips.
  • Bake in the oven until the top is beautifully golden, for about 30 to 35 minutes. Let it cool in the pan before cutting into bars and serving.
