Butterscotch chip oatmeal cookies with coconut for chewy or crispy treats in minutes.
Ingredients:
  • 1.25 cups unsalted butter at room temperature
  • 1 teaspoon baking soda
  • 0.25 teaspoon ground nutmeg
  • 3 cups quick-cooking rolled oats
  • 1 cup butterscotch chips
  • 0.5 cup sweetened flaked coconut
Instructions:
  • Preheat the oven to 375°F (190°C) for the perfect baking temperature.
  • In a bowl, whip together butter, brown sugar, white sugar, egg, and vanilla extract until smooth. Mix in flour, baking soda, salt, cinnamon, nutmeg, and oats until fully incorporated. Fold in butterscotch chips and coconut. Scoop dough onto baking sheets, spacing them 2 inches apart.
  • Bake cookies in the preheated oven until bottoms are a light golden brown, about 7-8 minutes for softer cookies or 9-10 minutes for a crunchy texture.
