Indulge in Oatmeal Scotchie Cookie Pancakes - a delightful twist on classic pancakes with oats and butterscotch chips.
Ingredients:
  • 1 cup all-purpose flour
  • 0.5 cup quick-cooking oats
  • 2 tablespoons brown sugar
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon ground cinnamon
  • 0.5 tablespoon fine salt
  • 1.25 cups buttermilk
  • 0.25 cup melted butter
  • 0.5 teaspoon vanilla extract, or to taste
  • 0.33333334326744 cup butterscotch chips
Instructions:
  • In a large bowl, mix together flour, oats, brown sugar, baking powder, baking soda, cinnamon, and salt.
  • Combine the buttermilk, butter, egg, and vanilla extract in a bowl. Stir in the flour mixture until just combined. Gently fold in the butterscotch chips and let the batter rest for 5 minutes.
  • Preheat a nonstick skillet over medium-low heat and spray with cooking spray. Pour 1/3 cup of batter into the skillet and spread into a circle slightly over 1/4-inch thick using the back of a spoon. Cook until edges are set, about 2 to 3 minutes. Flip and cook for an additional 1 to 2 minutes.
