Easy chicken and artichoke rice

Wholesome chicken and artichoke rice for a quick and nutritious dinner.
Ingredients:
  • 25g unsalted butter
  • 2 leeks (white part only), finely chopped
  • 1 bay leaf
  • Zest and juice of 1 lemon, plus extra wedges to serve
  • 2 x 180g skinless chicken breast fillets, cut into thin strips
  • 250g basmati rice
  • 500ml chicken stock
  • 40.00 ml chopped basil leaves
  • 6-8 chargrilled artichokes hearts, cut into quartered
Instructions:
  • In a large saucepan over low heat, combine butter and oil to create a flavorful base. Stir in leeks, bay leaf, and garlic, cooking for approximately 5 minutes until the leeks become tender, stirring occasionally.
  • Combine the lemon rind and chicken in the saucepan, cooking and stirring for approximately 5 minutes until the chicken turns opaque. Mix in the rice, ensuring the grains are well coated, then pour in the stock and half of the lemon juice. Increase the heat to bring to a boil, then reduce to low heat, cover, and simmer for 12 minutes.
  • After removing from the heat, let it sit covered for an additional 10 minutes.
  • Incorporate the chopped basil, artichoke hearts, and the rest of the lemon juice.
  • Garnish with cracked black pepper and lemon wedges before serving.
