Chicken with artichoke risoni

Create a luxurious chicken and artichoke pasta dish with minimal ingredients.
Ingredients:
  • 8 chicken drumsticks
  • 60g flaked almonds, roughly chopped
  • 500g pkt risoni
  • 200g marinated artichokes, cut into quarters
  • 100g pitted Kalamata olives
  • Zest and juice of 1 lemon
  • 100g pkt sweet baby leaves with herbs
Instructions:
  • Preheat your oven to a perfect 200°C. Season your chicken generously, then carefully cut a slit into each drumstick.
  • In a frypan over medium heat, sizzle olive oil. Pan-sear chicken for 15 mins, flipping for golden perfection. Move chicken to a baking dish. Bake for 15 mins, then sprinkle with almonds and bake for another 15 mins.
  • Bring a large saucepan of water to a boil. Cook risoni for 11 minutes, then drain. Combine risoni with artichokes and their marinade, olives, lemon zest and juice, and baby greens. Season with salt and pepper and serve alongside the roast chicken.
