Easy chicken curry

Ingredients:
  • 1 clove garlic, thinly sliced
  • 1 medium brown onion, sliced
  • 23.00 gm olive oil
  • 2.50 gm curry powder
  • 1/2 tsp ground white pepper
  • 1.25 gm ground ginger
  • 1 tsp ground coriander
  • 2 bay leaves
  • 20 chicken drumettes
  • 250g washed potatoes (skin on), cut into 3 cm chunks
  • 15.00 gm raw sugar
  • 4.80 gm cooking salt
  • 255.00 gm chicken style liquid stock
  • 250.00 gm water, plus extra if required
Instructions:
  • Combine garlic, onion, olive oil, curry powder, pepper, ginger, bay leaves, and coriander in a large frying pan. Cook over low heat, stirring, until fragrant.
  • Add the chicken drumlets and continuously turn them until they change color to seal in the juices.
  • Combine chicken stock, water, sugar, salt, and potato in a pot. Stir and simmer until the chicken is cooked and the potato is tender, allowing them to absorb around 50% of the liquid. Add more water if needed.
