Creamy chicken Florentine with a shortcut twist. Perfect with rice, potato, or couscous.
Ingredients:
  • 1 pound skinless, boneless chicken breast, cut into 1-inch cubes
  • salt and ground black pepper to taste
  • 1 medium shallot, chopped
  • 1 clove garlic, minced
  • 2 medium tomatoes, chopped
  • 1 (10.5 ounce) can condensed cream of mushroom soup
  • 0.5 cup chicken broth
  • 0.25 cup sour cream
  • 1 (10 ounce) package fresh spinach
  • 1 cup shredded mozzarella cheese
Instructions:
  • Season the chicken liberally with a pinch of salt and freshly cracked black pepper.
  • In a deep skillet over medium heat, allow the oil to heat up. Add the chicken and saute until fully cooked, approximately 6 to 8 minutes, until no longer pink in the center and the juices run clear. Transfer the cooked chicken to a plate.
  • Sauté shallot and garlic until fragrant. Stir in tomatoes and cook briefly. Mix in condensed soup, chicken broth, and sour cream. Add spinach and simmer for 5 minutes.
  • Plate the dish and generously sprinkle shredded mozzarella cheese on top.
