Indulge in the delightful pairing of tender chicken and gooey cheese in this cozy chicken mac and cheese dish, topped with crispy breadcrumbs for a satisfying crunch.
Ingredients:
  • For the Chicken Mac and Cheese
  • 8 ounces dry macaroni
  • 1/2 sweet onion, chopped
  • 1 clove garlic, minced
  • 1/4 cup unsalted butter
  • 3 tablespoons all-purpose flour
  • 2 cups whole or 2% milk
  • 2 cups grated cheddar cheese
  • 1 teaspoon dried mustard (optional)
  • 2 cups shredded cooked chicken (See Recipe Note)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • For the Crispy Breadcrumbs:
  • 2 tablespoons unsalted butter
  • 3/4 cup breadcrumbs, such as panko
Instructions:
  • Prepare the pasta: Boil salted water and cook the pasta until al dente, following package instructions. Drain, rinse with cold water to halt cooking, and prevent sticking. Set aside.
  • Sauté the onions and garlic: Melt butter in a large pot over medium heat. Add chopped onions and cook until translucent. Stir in garlic and cook for 30 seconds. Sprinkle flour over the mixture and cook for another minute.
  • Gradually pour in the milk while whisking continuously, allowing the flour and onion mixture to thicken. Add the grated cheese and mustard, stirring until the cheese melts. Cook, stirring occasionally, until desired consistency is reached.
  • Combine the chicken and pasta with the sauce: After the cheese has melted, mix in the cooked chicken and pasta. Season with salt and pepper to taste.
  • Prepare the breadcrumbs: While you are multitasking in the kitchen, melt butter in a small skillet over low heat. Mix in the breadcrumbs until fully coated. Stir continuously over low heat until golden brown, which will take about 3 to 4 minutes. Once done, remove from heat and allow it to cool. Pro-tip: Toast the breadcrumbs in advance and keep them fresh in an airtight container.
  • Serve the ultra-creamy cheesy chicken macaroni straight from the pot and garnish with crispy breadcrumbs on top.
