Baked chicken macaroni cheese

Easy everyday mac and cheese recipe for ultimate comfort food.
Ingredients:
  • 310g can corn kernels
  • 125g mushrooms, sliced
  • 1 red capsicum, seeded, chopped
  • 60g butter
  • 62.50 ml plain flour
  • 643.75 gm milk
  • 250.00 ml grated tasty cheese
  • 125.00 ml grated parmesan cheese
  • Spiral pasta, cooked, drained and kept hot
  • 1 small barbecue chicken, skin removed, flesh shredded
  • 125.00 ml frozen peas (optional)
  • 250.00 ml fresh breadcrumbs
  • 40.00 ml chopped parsley
  • Salad or steamed vegetables to serve, if desired
Instructions:
  • Preheat your oven to a moderate temperature of 180°C.
  • In a large saucepan over medium heat, sauté corn, mushrooms, and capsicum for 2-3 minutes until tender. Transfer to a bowl.
  • In the same saucepan over medium heat, melt the butter. Add the flour and cook, stirring, for 1 minute.
  • Whisk in milk until smooth off the heat. Return to heat, stirring until sauce boils and thickens. Simmer on low for 3 mins. Stir in half of each cheese until melted.
  • Take the pot off the heat, then combine the pasta, chicken, and vegetables with your preferred seasonings. Transfer the mixture into a 2-liter oven-safe dish.
  • Top with the mixture of the remaining cheese, breadcrumbs, and parsley. Bake until golden brown, around 25-30 minutes. Enjoy with a side of salad or steamed vegetables, if preferred.
