Cheesy favorite upgraded with veggies, less fat for a healthier twist.
Ingredients:
  • 375.00 ml dried macaroni pasta
  • 18.20 gm olive oil
  • 1 medium brown onion, chopped
  • 500g chicken thigh fillets, trimmed, sliced
  • 20.00 ml plain flour
  • 11.80 gm wholegrain mustard
  • 300ml Cooking Cream
  • 50g shaved ham, sliced
  • 300g broccoli, cut into small florets
  • 125.00 ml frozen baby peas
  • 40.00 ml chopped fresh flat-leaf parsley leaves
  • 125g grape tomatoes, halved
  • 125.00 ml fresh breadcrumbs
  • 125.00 ml reduced-fat grated tasty cheese
Instructions:
  • Preheat your oven to 180°C/160°C fan-forced. Cook the macaroni in a large pot of boiling water according to the package instructions until tender. Drain the macaroni.
  • Heat oil in a large deep frying pan over medium-high heat. Sauté onion and garlic until softened. Stir in chicken and cook until browned. Add flour and mustard, cook for 1 minute, then reduce heat to medium-low.
  • Pour in the luscious cream and toss in the savory ham. Season with a pinch of salt and a grind of black pepper. Gently stir to mix everything together. Add in the vibrant broccoli, sweet peas, fresh parsley, and cooked macaroni. Toss gently to ensure everything is coated evenly. Divide the mixture into four ovenproof dishes each with a 2-cup capacity. Garnish the top with juicy tomato slices. Mix breadcrumbs and cheese together and generously sprinkle over the pasta mixture.
  • Bake until tops are golden, cheese is melted, and edges are bubbly. Let it rest for 5 minutes before indulging in this gooey delight.
