Indulge in a cozy, cheesy cauliflower and broccoli pasta bake this fall.
Ingredients:
  • 50g plain flour
  • 625ml milk
  • 200g Don Middle Bacon Rashers, rind removed, finely chopped
  • 375g Macaroni
  • 500g pkt frozen Cauliflower & Broccoli
  • 60g Butter
  • 120g tasty cheese
Instructions:
  • Preheat oven to 200C. Cook macaroni in a large saucepan of boiling water according to package instructions until al dente, adding cauliflower and broccoli in the last 2 minutes of cooking. Drain thoroughly before proceeding.
  • Heat a large saucepan over medium-high heat. Cook the bacon, stirring occasionally, for 3 minutes until crisp. Use a slotted spoon to transfer the bacon to a plate. Melt the butter in the same pan. Add the flour and cook, stirring, for 2 minutes until the mixture bubbles and becomes grainy. Reduce the heat to low. Gradually pour in the milk. Cook and stir constantly for 5 minutes until the sauce boils and thickens. Remove from the heat and stir in the cheddar. Season with salt and pepper to taste.
  • Combine the macaroni mixture with crispy bacon, then transfer it to a large baking dish. Bake for 20 minutes or until beautifully golden and piping hot.
