Cauliflower and broccoli gratin

Elevate any meal with this decadent cauliflower and broccoli gratin, perfect alongside roast meat or as a vegetarian centerpiece.
Ingredients:
  • 500g cauliflower, cut into florets
  • 500g broccoli, cut into florets
  • 60g butter
  • 70g (1 cup) fresh breadcrumbs (made from day-old bread)
  • 500ml (2 cups) milk
  • 1 brown onion, halved, coarsely chopped
  • 4 fresh parsley stalks
  • 4 whole black peppercorns
  • 2 whole cloves
  • 1 dried bay leaf
  • 30g butter
  • 40.00 ml plain flour
  • 40g (1/2 cup) coarsely grated Tasty Cheese Block (500g)
  • Salt and ground white pepper, to season
Instructions:
  • Preheat the oven to 180°C. For the cheese sauce, gently simmer milk with onion, parsley stalks, peppercorns, cloves, and bay leaf. Let it sit for 15 minutes to infuse flavors.
  • Pass the milk mixture through a fine sieve into a large jug, discarding any solids.
  • In a large saucepan over medium-high heat, melt the butter until foaming. Stir in the flour and cook for 1-2 minutes until the mixture bubbles and pulls away from the pan's sides. Remove from heat.
  • Pour in half of the milk slowly, whisking constantly with a balloon whisk until the mixture is smooth. Then add the rest of the milk gradually, whisk until smooth and combined.
  • Heat saucepan over medium-high heat and boil while continuously stirring with a wooden spoon for 5 minutes until sauce thickens and coats the back of the spoon. Remove from heat, stir in cheese until melted, then season with salt and pepper to taste.
  • Simmer the cauliflower in a pot of salted boiling water for 5 minutes, then add the broccoli and cook for an extra 2 minutes until vibrant green and tender-crisp. Drain the vegetables and then place them beautifully in a 1.5L (6 cup) ovenproof dish.
  • In a hot frying pan, melt the butter until it foams. Stir in garlic and cook for 30 seconds until fragrant. Add breadcrumbs and cook for 5 minutes until golden brown. Take it off the heat.
  • Cover the cauliflower and broccoli with luscious cheese sauce and sprinkle a generous amount of breadcrumbs on top. Bake in a preheated oven until beautifully golden brown and heated through. Serve hot straight from the oven for maximum deliciousness.
