Indulge in a cheesy broccoli and cauliflower gratin: a flavorful and satisfying veggie dish.
Ingredients:
  • 2 teaspoons butter
  • 2 heads cauliflower
  • 2 heads broccoli
  • 0.5 cup butter
  • 0.5 cup all-purpose flour
  • 4 cups milk
  • 1 tablespoon mustard powder
  • 1 tablespoon Worcestershire sauce
  • 0.5 teaspoon ground black pepper
  • 2 cups grated Cheddar cheese
  • 1 cup Italian seasoned bread crumbs
  • 0.25 cup extra-virgin olive oil
  • 1 pinch paprika, or to taste
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and generously grease a baking dish with 2 teaspoons of butter.
  • Prepare the cauliflower by removing the core and cutting it into large florets. Do the same for the broccoli, cutting it into large florets and peeling and quartering the stalks.
  • 1. Bring a large pot of water to a boil. Add cauliflower and cook for 8-10 minutes until tender. Use a slotted spoon to transfer cauliflower to a strainer and rinse under cold water to stop cooking. 2. In the same pot, add broccoli stalks and cook for 3 minutes. Then add broccoli florets and cook for an additional 5 minutes until tender. 3. Transfer broccoli to the strainer and rinse under cold water. Pat dry cauliflower and broccoli with paper towels and place them in a baking dish.
  • In a saucepan over medium heat, melt 1/2 cup butter. Whisk in flour until a thick paste forms. Keep whisking until the flour starts to brown, for about 4 minutes. Add milk, whisk constantly until the sauce thickens for 2 to 4 more minutes. Remove from heat and stir in mustard, Worcestershire sauce, and pepper. Gradually whisk in Cheddar cheese until smooth. Pour the cheese sauce over the cauliflower and broccoli, tapping the baking dish on the counter to remove air bubbles.
  • Combine bread crumbs with aromatic olive oil to create a flavorful topping. Spread the bread crumb mixture over the vegetable and sauce blend, then finish by sprinkling with a hint of paprika.
  • Bake in the preheated oven for about 30 minutes until bubbly and golden brown.
