Carrot, cauliflower, broccoli and mustard gratin

Transform frozen veggies into a delightful, crispy gratin.
Ingredients:
  • 500g frozen carrot, cauliflower and broccoli
  • 20g butter
  • 20.00 ml plain flour
  • 257.50 gm milk
  • 11.80 gm wholegrain mustard
  • 20.00 ml finely chopped fresh flat-leaf parsley leaves
  • 40.00 ml panko breadcrumbs
Instructions:
  • Fire up the grill on high heat.
  • Cook vegetables according to package instructions, then drain. Transfer the vegetables to a 5-cup flameproof dish.
  • In a saucepan over medium heat, melt butter with garlic for 2 minutes. Sprinkle flour and cook for 1 minute until mixture bubbles. Remove from heat, gradually stir in milk and mustard. Return to heat, cook for 3 minutes until sauce thickens. Add parsley, season with salt and pepper, then pour over vegetables. Sprinkle with breadcrumbs before serving.
  • Place dish under the grill until breadcrumbs are golden brown, about 3 to 4 minutes. Serve.
