Briefly blanch broccoli and cauliflower, then combine with red bell pepper, cucumber, and carrots. Drizzle with Italian dressing and chill before enjoying.
Ingredients:
  • 1.5 cups broccoli florets
  • 1.5 cups cauliflower florets
  • 1 green bell pepper, cut into 1 inch pieces
  • 1 cucumber - peeled, seeded and chopped
  • 1 carrot, coarsely chopped
  • 0.25 cup Italian-style salad dressing
Instructions:
  • 1. Bring a pot of well-salted water to a vigorous boil, then add the broccoli and cauliflower florets for just one minute. Drain and rinse the florets.
  • In a medium mixing bowl, toss broccoli, cauliflower, bell pepper, cucumber, carrot, and Italian dressing until well coated. Cover and chill in the refrigerator for one hour.
