Broccoli salad with a mix of textures, quick and refreshing with marinated vegetables.
Ingredients:
  • 3 heads broccoli with long stems
  • 3 medium carrots
  • 0.5 medium sweet onion, minced
  • 0.5 cup olive oil
  • 0.5 cup white wine vinegar
  • 1 medium lemon, juiced
  • 0.5 cup salted roasted sunflower seeds
  • salt to taste
Instructions:
  • Separate broccoli stems and reserve for later use. Cut broccoli into bite-sized florets.
  • Place the shredder blade on the food processor and shred half of the broccoli stems and half of the carrots. Then, switch to the slicer blade to slice the remaining broccoli stems and carrots. Transfer everything from the food processor bowl into a large bowl with broccoli florets and onion.
  • In a small bowl, combine mayonnaise, olive oil, vinegar, and lemon juice. Pour over the veggies and toss to coat. Refrigerate for at least 1 hour to marinate.
  • Season with a pinch of salt to enhance flavors, then sprinkle sunflower seeds right before serving.
