Exciting charred Mediterranean brassicas dish featuring Brussels sprouts, kale, broccoli, cauliflower, and romanesco.
Ingredients:
  • 500 g Brussels sprouts
  • 50 g Parmesan cheese plus extra to serve
  • 250 g Greek yoghurt
  • ½ a lemon
  • 2 thick slices of sourdough bread
Instructions:
  • Trim and halve the Brussels sprouts, char in a large non-stick frying pan over medium heat for 15 minutes until crispy outside and tender inside. Remove onto a board. Grate most of the Parmesan and mix it with yogurt, lemon juice, salt, and pepper. Spread the yogurt mixture on a serving platter. Heat the pan over medium-high heat. Slice the bread into 1cm cubes and toast with olive oil for 4 minutes until golden. Grate the remaining Parmesan over the croutons and Brussels in the last few seconds. Place the croutons and Brussels on top of the yogurt and sprinkle with extra Parmesan shavings and olive oil before serving. Mix it all together right before serving.
