Avocado yoghurt dip with vegetables

Whip up a creamy avocado yogurt dip for a light and delicious party appetizer.
Ingredients:
  • 260g yoghurt
  • 20.00 ml lime zest
  • 10.60 gm lime juice
  • 1 avocado, mashed
  • 22.00 gm sweet chilli sauce
  • 40.00 ml chopped coriander
  • Sea salt & cracked black pepper to taste
  • 2 carrots, cut into sticks
  • 1 red capsicum, cut into sticks
  • 1 zucchini, cut into sticks
  • 100g broccoli, cut into florets
Instructions:
  • Combine yoghurt, lime zest, lime juice, avocado, sweet chilli sauce, and coriander in a medium bowl. Mix well and season with salt and pepper.
  • Add carrots, capsicum, zucchini, and broccoli to a heat-proof bowl. Pour boiling water over the vegetables and let sit for 30 seconds. Drain and then plunge the vegetables into cold water. Finally, drain thoroughly.
  • Place the blanched vegetables elegantly on a serving plate and accompany them with a delicious dip.
