Whip up a delicious avocado dip for a perfect snacking delight with crisp veggies.
Ingredients:
  • 125g baby corn
  • 1 large red capsicum, deseeded, cut into thin strips
  • 2 carrots, peeled, cut into themed shapes (see setting tips) or 5cm-long sticks
  • 2 small Lebanese cucumbers, cut into 5cm-long sticks
  • 2 ripe medium avocados, halved, deseeded and peeled
  • 70g (1/4 cup) Greek Style Yoghurt
  • 42.00 gm fresh lemon juice
Instructions:
  • In a large bowl, mash the avocado until almost smooth using a fork. Mix in the yogurt and lemon juice until well combined. Transfer the dip to a small serving bowl, cover with plastic wrap, and refrigerate until ready to serve.
  • Assemble the corn, bell peppers, carrot, and cucumber sticks in a serving bowl and enjoy with the dip.
