Avocado dip with corn chips

Creamy avocado chip dip, a party favorite!
Ingredients:
  • 6 corn tortillas, each cut into 6 wedges
  • Light olive oil spray
  • 1 large ripe avocado, halved, stone removed
  • 21.00 gm lime juice
  • 1 ripe tomato, diced
  • 1/2 small red onion, finely chopped
  • 62.50 ml fresh coriander leaves, finely chopped
Instructions:
  • Preheat your oven to 170°C. Arrange half of the tortillas on 2 large baking trays, then generously spray with olive oil. Bake for 7 to 10 minutes until they turn golden. Repeat the process with the remaining tortillas.
  • Mash together ripe avocado and fresh lime juice until smooth. Gently fold in diced tomato, finely chopped onion, and fragrant coriander. Season generously with a pinch of salt and a sprinkle of freshly ground pepper. Transfer the flavorful mixture to a stylish small serving bowl.
  • Enjoy creamy avocado dip alongside crispy corn chips.
