Guacamole with cheesy baked corn chips

Classic dish upgraded with tangy parmesan.
Ingredients:
  • 2 large avocados
  • 11.00 gm sweet chilli sauce
  • 1/2 small red onion, chopped
  • 10.60 gm lemon juice
  • 20.00 ml coriander, chopped
  • salt and cracked black pepper
  • white round corn chips
  • parmesan, grated
Instructions:
  • Preheat oven grill to high. For the guacamole, combine avocados, sweet chili sauce, cumin, red onion, garlic, lemon juice, coriander, salt, and black pepper in a large bowl. Roughly mash with a fork, cover, and refrigerate.
  • Place white round corn chips on a foil-lined baking tray, sprinkle with grated parmesan, and grill until golden, about 1 minute. Serve with guacamole.
